Mediterranean favourite
Tomatoes are an immensely popular food, used intensely in mediterranean cuisines. It can be found in kitchens across the world and is popular due to its crisp umami sweetness, health benefits and vibrant colours.
Tomatoes are actually edible berries (Solanum lycopersicum) and therefore technically a fruit, not a vegetable. However, the tomato is considered a "culinary vegetable" because it has a much lower sugar content than culinary fruits. Its domestication and cultivation dates back to the Aztecs in Mexico. Tomatoes were then brought to Europe by the Spanish in the 16th century as part of the Columbian exchange.
The exact date when tomatoes were discovered is unknown, but they were already domesticated around 500 BC in southern Mexico. Today, the main producers of tomatoes are China, India and Turkey.

Tomatoes are a warm-weather crop and need 3 months of consistent warmth for harvest. They are typically grown and harvested between May and October depending on specific weather conditions.
